Ingredients

  • 1/2 ring Capital Ham Sausage

  • 4 tbsp Olive oil

  • 1/2 Onion, chopped

  • 5 cloves Garlic, chopped

  • 4 tbsp All-purpose flour (optional)

  • 2 l Chicken broth or water

  • 500 g Fingerling Potato, chopped

  • 2 cups Broccoli florets

Directions

  • Set the stove to maximum heat and place a pot on it to heat up.
  • Cut the Capital ham sausage into quarters. Add olive oil to the heated pot and add the ham sausage. Brown the sausage on all sides. Remove the sausage from the pot and set it aside.
  • Add chopped onions to the pot and sauté until they start to brown. Add the chopped garlic and sauté for another minute.
  • Optional: Sprinkle flour over the onions and garlic in the pot to build a roux. Stir well to combine and cook for a minute to thicken the soup base.
  • Add chicken broth or water to the pot, stirring to incorporate any browned bits from the bottom of the pot. Add water and chopped potatoes to the pot.
  • Bring the mixture to a boil and simmer uncovered for about 10-15 minutes until the potatoes are cooked through.
  • While the soup is simmering, chop the broccoli florets into bite-sized pieces.
  • With a hand blender, blend the soup until smooth or desired consistency is achieved.
  • Add the chopped broccoli to the pot and simmer for an additional 5 minutes until the broccoli is tender.
  • Return the cooked ham sausage to the pot and stir to combine. Cook for another 2-3 minutes until heated through.
  • Taste the soup and adjust the seasoning with salt and pepper if needed. Adjust soup consistency with flour or broth as needed.
  • Serve the ham and broccoli soup hot. Enjoy!
