Ingredients

  • 1 cup Capital Jalapeno Cheddar Smokies (diced)

  • 2 tsp Cooking Oil

  • 2 Garlic cloves (Minced)

  • 8 oz Cream Cheese (Softened)

  • 1 can Chilies (Chopped)

  • 1.5 cup  Jalapeno Monterey Jack Cheese (Grated)

Directions

  • Preheat the oven to 350º
  • Remove stems from the mushrooms and chop finely and set aside.
  • Heat oil in a frying pan on medium. Add the Jalapeño Cheddar Smokies and cook for about 4 minutes. Add the mushroom pieces and garlic and cook for another 5 minutes.  
  • Remove from heat and place into a medium bowl. Add the cream cheese, jalapenos, and 1 cup of Monterey Jack cheese and combine well.
  • Spoon cream cheese mixture into mushroom caps. Place mushroom caps onto a lined baking sheet. Sprinkle the remaining cheese over top.
  • Bake in the oven for 15 minutes. Next, turn the broiler on High and place an oven rack 4 inches from the top. Place the tray on the rack and broil for 3-5 minutes, watching very carefully, until they are golden brown. Let them cool for 5 minutes and serve immediately
