Summer Sausage Frittata
This Summer Sausage Frittata is a simple and satisfying one-pan dish that's perfect for breakfast, brunch, or even a light dinner! Made with golden seared potatoes, caramelized onions, and Capital Summer Sausage, it's held together with fluffy eggs, creamy milk, and savory parmigiano cheese.

Ingredients
150 g Capital Summer Sausage, diced
2 medium Yellow potatoes, thinly sliced
1 medium Onion, thinly sliced
3 tbsp Olive oil
5 Eggs
1/4 cup Milk
1/2 cup Grated Parmigiana Cheese (or a generous fistful)
Salt and black pepper, to taste
1 tsp Dried Parsley (plus extra for garnish, if desired)
Directions
- Heat 3–4 tablespoons of olive oil in a non-stick pan over medium-high heat.
- Evenly arrange the thinly sliced potatoes in the pan. Season with salt and black pepper and let them sear for a couple of minutes.
- Add the diced Capital Summer Sausage, sliced onions, and dried parsley. Sauté until the Capital Summer Sausage and onions begin to brown and the potatoes develop a bit of color.
- In a bowl, whisk together the eggs, milk, grated parmigiano cheese, and a pinch more salt and pepper.
- Pour the egg mixture over the seared ingredients in the pan, then lower the heat to low.
- Cover the pan with a lid and let the frittata cook slowly until the eggs are mostly set and the mixture becomes flippable (about 5–7 minutes).
- Carefully place a dinner plate over the pan, flip both the plate and frittata together, and slide the frittata back into the pan to finish cooking on the other side.
- Allow the frittata to cook for a few additional minutes until fully set and the underside is golden.
- Transfer to a cutting board and let cool slightly before slicing and serving.
