Beer Sausage Potato Salad

Ingredients
250 g Capital Beer Sausage, sliced
1 pound Potatoes, washed and peeled
1/2 cup Mayonnaise
2 tbsp Dijon mustard
2 tbsp White wine vinegar
1 tsp Sugar
1/2 cup Celery, chopped
1/2 cup Green onion, chopped
4 Hard-boiled eggs, chopped
2 tbsp Fresh dill chopped
1/3 Lemon, juiced
Salt and pepper to taste
Directions
- Cut the potatoes into bite-sized pieces and place them in a large pot. Cover with water and add a generous pinch of salt. Bring to a boil and cook until tender, about 10-15 minutes. Drain and let cool.
- In a large bowl, whisk together the mayonnaise, Dijon mustard, white wine vinegar, sugar, and lemon juice. Season with salt and pepper to taste.
- Add the cooled potatoes, sliced Capital Beer Sausage, celery, green onion, and chopped hard-boiled eggs to the bowl with the dressing. Toss everything together until well coated.
- Sprinkle the chopped fresh dill over the top of the salad and give it one final toss.
- Chill the potato salad in the refrigerator for at least 30 minutes to allow the flavors to meld together.
- Before serving, taste and adjust seasoning as needed. Garnish with additional fresh dill if desired.
