Ingredients

  • 250 g Capital Beer Sausage, sliced

  • 1 pound Potatoes, washed and peeled

  • 1/2 cup Mayonnaise

  • 2 tbsp Dijon mustard

  • 2 tbsp White wine vinegar

  • 1 tsp Sugar

  • 1/2 cup Celery, chopped

  • 1/2 cup Green onion, chopped

  • 4 Hard-boiled eggs, chopped

  • 2 tbsp Fresh dill chopped

  • 1/3 Lemon, juiced

  • Salt and pepper to taste

Directions

  • Cut the potatoes into bite-sized pieces and place them in a large pot. Cover with water and add a generous pinch of salt. Bring to a boil and cook until tender, about 10-15 minutes. Drain and let cool.
  • In a large bowl, whisk together the mayonnaise, Dijon mustard, white wine vinegar, sugar, and lemon juice. Season with salt and pepper to taste.
  • Add the cooled potatoes, sliced Capital Beer Sausage, celery, green onion, and chopped hard-boiled eggs to the bowl with the dressing. Toss everything together until well coated.
  • Sprinkle the chopped fresh dill over the top of the salad and give it one final toss.
  • Chill the potato salad in the refrigerator for at least 30 minutes to allow the flavors to meld together.
  • Before serving, taste and adjust seasoning as needed. Garnish with additional fresh dill if desired.
