Ingredients
1 Link Capital Naturally Smoked Ham Sausage, sliced into quarter-inch pieces
5 Tbsp Olive Oil
1 Cup Carrots, chopped
1 Cup Celery, chopped, leaves reserved
1 Cup Onions, chopped
2 Cloves Garlic, minced
1 tsp Thyme, dried
1 tsp Rosemary, dried
2 Bay Leaves
2 Cups Cups Lentils, rinsed and sorted
8 Cups Vegetable Stock, adjust as needed
1 Can San Marzano Tomatoes, diced or blended, to taste
Salt and Pepper, to taste
Directions
- In a large pot, heat the olive oil over medium to medium-high heat.
- Add the sliced smoked ham sausage to the pot and cook until slightly browned.
- Add the carrots and celery (excluding leaves) to the pot and sauté until they start to soften. Follow with the onions and cook until translucent. Stir in the garlic and cook for another minute until fragrant.
- Add the celery leaves, and sprinkle in thyme, rosemary, and bay leaves. Stir to combine.
- Gradually pour in the vegetable stock, adjusting the amount based on the desired consistency and the amount of lentils used.
- Stir in the San Marzano tomatoes, and adjust the quantity to your preference.
- Add the lentils to the pot, bring to a simmer, and cook until the lentils are tender, about 35-40 minutes with the lid slightly ajar.
- Adjust the seasoning with salt and pepper to taste.
