Italian Sausage Sandwich

Ingredients
4 links Capital Italian Sausage
2 tbsp Olive Oil
4 Sub Buns
2 Bell Peppers (1 Red, 1 Green), Sliced into Strips
1 Onion, Sliced into Strips
5 cloves Garlic, Finely Chopped
Tomato Sauce, As Needed
Grated Parmigiano Reggiano Cheese, As Needed
Fresh Mozzarella Cheese, Torn into Chunks
Fresh Parsley, Chopped (Optional for Garnish)
Directions
- Preheat your oven to 400°F (200°C).
- In a pan over medium heat, add 1-2 Tbsp of Olive Oil and brown the Italian Sausage until nearly cooked through. Remove and let cool slightly before slicing into 1/2" medallions.
- In the same pan, sauté the Bell Peppers for a few minutes. Then, add the Onions and the Sausage medallions. Cook until the vegetables are soft and the sausage is fully cooked.
- Add the finely chopped Garlic to the pan and stir-fry for about a minute until fragrant.
- Pour in Tomato Sauce to the pan and stir everything together. Simmer until the sauce is heated through and adjust the consistency according to your preference for the sandwich filling. Remove from heat.
- Slice the Sub Buns in half without cutting all the way through and drizzle with Olive Oil. Stuff with the sausage and vegetable mixture, then top generously with Grated Parmigiano Reggiano and chunks of Fresh Mozzarella Cheese.
- Place the filled subs on a baking tray and bake in the preheated oven until the cheese is melted and bubbly, about 5 minutes.
- Optionally, garnish with chopped Fresh Parsley. Wrap each sub tightly in parchment paper to hold its shape and let rest for 2 minutes before slicing.
- Serve the Italian Sausage Subs warm, with additional tomato sauce if desired. Enjoy!
