Ingredients

  • 2 cups Capital Turkey Sausage (Chopped)

  • 2 cups  Greek Yogurt - plain

  • 1 cup Mayonnaise

  • 1/4 cup Grainy Dijon Mustard

  • 4 tbps Fresh Sage (Chopped)

  • 2 tbps Fresh Thyme (Chopped)

  • 3 cups Swiss Cheese (Grated)

  • 1 tbps Olive Oil

  • 1 cup Onion (Chopped)

  • 2 cups Eggplant (Diced)

  • 3 Garlic cloves (Minced)

  • 1/2 tsp Salt

  • 1/2 tsp Pepper

  • 3 cups Cauliflower Rice

  • 1 cup Green Beans

  • 1/2  Parmesan Cheese (Grated)

Directions

  • Preheat oven to 375º. Have a 4-quart baking dish greased.
  • In a large bowl mix in the first 5 ingredients together. Next, add 2 cups of the grated Swiss cheese, and mix until well combined. Set the bowl aside.
  • Add olive oil to a large frying pan on medium-high heat. Add the onions, a cook for about 5-6 minutes until translucent. Next, add the eggplant, and cook for 7-8 minutes until soft and slightly browned. Add the 4 remaining ingredients and cook for 2 minutes, until fragrant.
  • Lower heat to medium and add the cauliflower rice, turkey sausage, and green beans. Stir into the eggplant mixture, and heat through for about 4-5 minutes, stirring occasionally.
