Turkey Sausage Cauliflower Rice Casserole

Ingredients
2 cups 2 Capital Turkey Sausage (Chopped)
2 cups 2 Greek Yogurt - plain
1 cup 1 Mayonnaise
1/4 cup 1/4 Grainy Dijon Mustard
4 tbps 4 Fresh Sage (Chopped)
2 tbps 2 Fresh Thyme (Chopped)
3 cups 3 Swiss Cheese (Grated)
1 tbps 1 Olive Oil
1 cup 1 Onion (Chopped)
2 cups 2 Eggplant (Diced)
3 3 Garlic cloves (Minced)
1/2 tsp 1/2 Salt
1/2 tsp 1/2 Pepper
3 cups 3 Cauliflower Rice
1 cup 1 Green Beans
1/2 1/2 Parmesan Cheese (Grated)
Directions
- Preheat oven to 375º. Have a 4-quart baking dish greased.
- In a large bowl mix in the first 5 ingredients together. Next, add 2 cups of the grated Swiss cheese, and mix until well combined. Set the bowl aside.
- Add olive oil to a large frying pan on medium-high heat. Add the onions, a cook for about 5-6 minutes until translucent. Next, add the eggplant, and cook for 7-8 minutes until soft and slightly browned. Add the 4 remaining ingredients and cook for 2 minutes, until fragrant.
- Lower heat to medium and add the cauliflower rice, turkey sausage, and green beans. Stir into the eggplant mixture, and heat through for about 4-5 minutes, stirring occasionally.
