Spaghetti Carbonara

Ingredients
3 slices Capital Thick Cut Bacon
500 g Pasta (Spaghetti or Linguine)
4 Eggs
1 pinch Salt
1 pinch Pepper
1 small handful Parmigiano Cheese
1 small handful Shredded Mozzarella
Directions
- Begin by boiling a pot of salted water (approx. 6 liters), and slicing your desired amount of Thick Cut Bacon into half-inch strips.
- Add the sliced bacon to a hot pan, and at the same time add your pasta to the boiling water.
- While the bacon and pasta are cooking, combine 3 whole eggs and 1 egg yolk into a bowl with Salt, Pepper, and a sprinkle of grated Parmigiano Cheese.
- When the bacon and pasta are cooked (approx. 10-12 minutes), remove some of the bacon fat from the pan and begin adding your pasta to the remaining bacon.
- Quickly add the egg mixture to the pasta and stir well. You may need to let the bacon pan cool down a little before adding the pasta and eggs to prevent them from scrambling.
- Move the pasta to a large serving bowl, top with parmigiano cheese to taste, and enjoy!
