Ingredients

  • 3 slices Capital Thick Cut Bacon

  • 500 g Pasta (Spaghetti or Linguine)

  • 4 Eggs

  • 1 pinch Salt

  • 1 pinch Pepper

  • 1 small handful Parmigiano Cheese

  • 1 small handful Shredded Mozzarella

Directions

  • Begin by boiling a pot of salted water (approx. 6 liters), and slicing your desired amount of Thick Cut Bacon into half-inch strips.
  • Add the sliced bacon to a hot pan, and at the same time add your pasta to the boiling water.
  • While the bacon and pasta are cooking, combine 3 whole eggs and 1 egg yolk into a bowl with Salt, Pepper, and a sprinkle of grated Parmigiano Cheese.
  • When the bacon and pasta are cooked (approx. 10-12 minutes), remove some of the bacon fat from the pan and begin adding your pasta to the remaining bacon.
  • Quickly add the egg mixture to the pasta and stir well. You may need to let the bacon pan cool down a little before adding the pasta and eggs to prevent them from scrambling.
  • Move the pasta to a large serving bowl, top with parmigiano cheese to taste, and enjoy!
