Ingredients

  • 1 ring Capital Ham Sausage

  • 1 medium bowl Rapini (Broccoli Rabe)

  • 1 Garlic clove

  • 1 large Shallot

  • 1 large Roma Tomato

  • 1 Mariano size drop Red Wine

  • 1 Mariano size drop Red Wine Vinegar

  • 1 Mariano size drop Olive Oil

  • 1 small pinch Salt

  • 1 small pinch Pepper

Directions

  • Bring a pot of lightly salted water to a boil and steam some washed Rapini using a vented steamer attachment or a pasta strainer with a lid on top. The goal is to steam the Rapini until it is tender and crisp, and the stems are slightly resistant yet breakable by your fingers.
  • In a pan with olive oil, lightly sauté some chopped garlic and shallot.
  • When the vegetables are fragrant, add some sliced Capital Ham Sausage and lightly brown the slices over medium heat. Once browned, add two tablespoons of red wine to the pan.
  • Once the Red wine has slightly thickened and coated the meat, set it aside on a serving plate.
  • Garnish the plate with the steamed Rapini, and sliced Tomato. Lightly drizzle some Olive Oil and Red Wine Vinegar over the vegetables to taste. Season with Salt & Pepper.
