Ingredients
1/3 pkg Capital Garlic Sausage, Sliced
1 tbsp Unsalted Butter
1 tbsp Olive Oil
1 lb Ruby Red Potatoes, Washed And Cubed
1 tsp Garlic Powder
1 tsp Paprika
1/2 tsp Salt, Or To Taste
1/4 tsp Chili Flakes (Optional)
1 tsp Tsp Parsley Flakes
1 Bell Pepper, Sliced
1 medium Onion, Sliced
Directions
- Par boil your potatoes using the following method:
- Wash the potatoes and cut them into even pieces.
- Place the cut potatoes in a pot of cold water, covering them by an inch.
- Add a pinch of salt if desired.
- Heat the pot on high and bring the water to a boil.
- Boil for about 4-5 minutes or until slightly tender.
- Drain the potatoes in a colander.
- Cool the potatoes if not using immediately, by letting them sit or rinsing with cold water. - Prepare your skillet on the stove over medium-high heat and add 1 Tbsp of butter and 1 Tbsp of olive oil.
- While the pan is heating, add your parboiled ruby red potatoes to the skillet.
- Allow the potatoes to sear and sit flat on one side for 3-4 minutes before turning to ensure a crispy exterior.
- Once the potatoes have developed a nice sear, about 8-9 minutes total, sprinkle over your seasoning mix: 1 tsp garlic powder, 1 tsp paprika, 1/2 tsp salt, 1/4 tsp chili flakes (optional), and 1 tsp parsley flakes.
- After the potatoes are evenly coated with the seasoning and have good colour, transfer them to a plate, leaving as much of the oil and butter in the pan as possible.
- Reduce the heat to medium and add the sliced Capital garlic sausage to the skillet. Cook until the sausage slices get some colour.
- Add diced bell pepper into the skillet, and cook until the peppers begin to soften.
- Push everything to one side of the skillet, and add the sliced onion to the cleared space and sauté until translucent and slightly caramelised.
- Mix all the skillet ingredients together, allowing the flavours to combine for an additional minute or two.
- Finally, add the potatoes back into the skillet, mixing everything thoroughly.
- Garnish with Italian parsley and serve hot directly from the skillet.
