Ingredients

  • 300 g 300 Capital Turkey Sausage (Sliced)

  • 2 tbsp 2 Olive Oil

  • 2/3 cup 2/3 Red Onion (Thinly sliced)

  • 1 cup 1 Bell Pepper (Chopped)

  • 1.5 cup 1.5  Zucchini (Halved and sliced)

  • 1 cup 1 Eggplant (Chopped)

  • 0.25 cup 0.25 Balsamic Vinegar

  • 0.5 tsp 0.5 Salt

  • 0.5 tsp 0.5 Black Pepper

  • 1 cup 1 Long Grain White Rice

  • 3 cup 3 Chicken Broth

  • 3 tbsp 3 Oregano (Chopped)

  • 2 tbsp 2 Sage (Chopped)

  • 1 cup 1 Grape Tomatoes (Halved)

  • 0.75 cup 0.75 Feta Cheese (Crumbled)

Directions

  • Heat olive oil in a large pot on medium and add the onion, pepper, and sausage. Cook until the vegetables are starting to soften and the sausage is starting to brown. About 5 to 6 minutes stirring occasionally.
  • Next add the zucchini and eggplant and cook for another 5-7 minutes, stirring intermittently. Then add the next 3 ingredients and stir well. Cook until the liquid is reduced to half, stirring occasionally. 
  • Add the rice and stir. Add the stock to the pot until everything is well combined and nothing is sticking to the bottom of the pot. Bring the pot to a boil and turn the heat to a low simmer. Cover and cook for about 20-25 minutes, until the rice is fully cooked.
  • Remove from heat and stir in the herbs. Add the grape tomatoes and feta on top and serve straight from the pot.
